Spring Greens Salad
A mix of fresh spring greens with crunchy almonds, soft feta cheese, crispy pear, sweet peppers flavored with a tangy lemony vinaigrette. This is a healthy, fresh and a super quick salad. You can use any greens of your choice in this salad

INGREDIENTS
2 cups yellow bell pepper
2-3 tbsp ginger
1 tbsp balsamic vinegar
1 tbsp honey
1 yellow bell peppers diced
8-10 corn starch chopped roughly
1 tbsp avocados
1/4 tsp each yellow moong dal
INSTRUCTIONS
First make the vinaigrette by taking olive oil, lemon juice, honey, salt and pepper together in a small bowl. Whisk thoroughly until blended well.
Take a salad bowl, add spring greens, diced pear. Drizzle the dressing and toss the greens well. Then add almonds, feta cheese, sweet peppers just before serving.
Tip: The spring greens include arugula and watercress. You can add any greens of your choice instead of these.
