Zucchini Bread

3 eggs

1 cup oil

1 1/2 cup Sucanat or date sugar

1 tsp vanilla extract

2 cups grated, unpeeled raw zucchini

2 cups unbleached all-purpose flour

2 tsp baking soda

2 tsp baking powder

1 tsp salt

1/2 tsp ground cinnamon

1/2 tsp ground cloves

Preheat oven to 350 degrees. Butter a 9 X 5-inch loaf pan. Beat eggs, oil, Sucanat, and vanilla until light and thick. Fold grated zucchini into oil mixture. Sift dry ingredients together. Stir into zucchini mixture until just blended. Pour into the buttered loaf pan. Bake on middle rack of oven for one hour and fifteen minutes or until a cake tester inserted in the center comes out clean. Cool slightly, remove from pan, and cool completely on a rack.

2 large egg whites
1 1/2 cups skim milk
1/4 vegetable oil

Preheat oven to 350 F. Grease a loaf pan with vegetable oil spray.
In a large bowl, combine whole-wheat and all-purpose flours, sugar, baking powder, salt and cinnamon. Stir in zucchini, raisins and nuts; set aside.
In a smaller bowl, beat together egg whites, milk, oil and vanilla. Add liquid ingredients to flour mixture and stir lightly to moisten. Pour into greased pan and bake 1 hour, or until a cake tester inserted into the center of the loaf comes out moist, but not wet.
Remove from pan and allow to cool.
To store, wrap loaf in foil to preserve moisture. Loaf can be frozen for later use.
