Blackberry Jam Cake recipe
Ingredients:
¾ cup of butter.
1 cup of sugar.
3 medium eggs.
1 cup of blackberry jam.
3 cups of flour.
1 teaspoon of baking soda.
1 teaspoon of cinnamon.
1 teaspoon of nutmeg.
1 teaspoon of cloves.
¾ cup of buttermilk.
1 cup of raisins.
1 cup of chopped nuts.
1 teaspoon of vanilla.
Directions:
Cream the butter and sugar.
Add the eggs, one at a time, creaming after each addition.
Add the blackberry jam.
Sift together 2 cups of the flour, baking soda, cinnamon, nutmeg and cloves.
Add the remaining cup of flour to cream mixture alternately with the buttermilk, starting and ending with dry ingredients.
Stir in the raisins, chopped nuts and vanilla.
Pour into two greased 9-inch cake pans.
Bake at 325°F (160°C) for 35-40 minutes or until done.
