Blackberry Chicken recipe
Ingredients:
Non-stick cooking spray.
4 chicken leg quarters.
Salt and black pepper, to taste.
2 tablespoons of melted butter.
½ cup of seedless red blackberry jam.
2 tablespoons of balsamic vinegar.
1 tablespoon of soy sauce.
Pinch of crushed red pepper.
Fresh parsley sprigs, to garnish.
Directions:
Preheat your oven to 375°F (190°C).
Coat a 9-inch by 13-inch baking dish with non-stick cooking spray.
Place the chicken leg quarters in the baking dish and sprinkle with the salt and pepper, then drizzle with the melted butter.
Bake for about 50 minutes or until the chicken is golden and cooked through.
In a small saucepan, combine the remaining ingredients (except parsley) and mix thoroughly.
Cook over low heat for about 1 minute, until the sauce is smooth, stirring occasionally.
Remove the chicken from the pan and place on a serving platter.
Top with the sauce and serve garnished with fresh parsley sprigs.
